Vegetarian Noodles

Ingredients
1 roll plain noodles
1 Tianjun cabbage leaf
15g dried Chinese mushrooms
4 slices carrot
2 cups water
1 black fungus
1 slice ginger
1 tbsp oil
Seasonings A
1 tbsp light soy sauce
1 tsp sugar
a little salt
a little pepper
a little corn flour
a little water
Seasonings B
2 tsp light soy sauce
a little salt
Method
1. Soak dried Chinese mushrooms in water until tender and cut into thin shreds. Cut carrot, cabbage and black fungus into thick shreds. Set aside.
2. Heat wok. Add 1 tbsp oil. Sautee ginger with low heat until fragrant. Add mushroom and carrot. Stir-fry briefly. Add cabbage and black fungus. Add seasonings A and cook until cabbage changes color. This forms the soup base.
3. Bring a pot of water to boil. Add plain noodles and cook until 80% done. Transfer noodles to bowl. Pour in soup base. Add seasonings B according to individual preference. Done.
