 Cheesecake

Ingredients
250g Digestive Biscuits
125g Margarine/Butter
135g Jelly cubes (any flavor)
300g Single/Double Cream
200g Soft cheese


Method
1. Place the digestive biscuits into a plastic sandwich bag. Seal the bag, and using a rolling pin, crush the biscuits so that you end up with a bag of biscuit crumbs.
2. Take the butter (or margarine) and melt it in a saucepan. Add in the digestive biscuit crumbs and mix until all of the butter (or margarine) is mixed evenly with the crumbs.
3. Pour the mixture into a cake tin and flatten it using the bottom of a tablespoon. This is the base of your cheesecake.
4. Take your jelly cubes and melt them with hot water (in a small bowl as to keep the original flavor) as instructed on the back of the packet. Leave this to cool, but not set.
5. Whilst waiting for your jelly mixture to cool, take the Single/Double cream and place it into a mixing bowl with the soft cheese. Use an electric whisk and whisk the two ingredients together.
6. Now pour in your cool jelly mixture and whisk everything together to form a smooth cheesecake mixture.
7. Pour this into the cake tin over the base and place it into the refrigerator.
8. After two hours, the cheesecake should have set and is now ready to eat.
