Garnet Yam and Chicken Soup

Ingredients

  • 480g of garnet yam
  • 1/2 prepared chicken
  • 1 onion
  • 1 bay leaf
  • 1 garlic clove
  • 1/2 can of tomato paste
  • 8 cups of water

Seasoning

  • pinch of salt and pepper

Method

1. Peel and cut garnet yam into pieces, soak in water for a while and then drain.

2. Cut chicken into pieces and water blanche.

3. Cut onion into pieces and slice garlic.

4. Heat some oil, fragrant onion and garlic, add garnet yam and chicken, stir fry for a while.

5. Add water and bay leaf, cook for 45 minutes then add tomato paste. Bring to boil, season to taste. Serve hot.

Note: Yam or sweet potato is known in Chinese medicine to clear heat, and to strengthen chi and kidney, spleen and stomach functions.
