Jiangnan Stir-fry Special
Ingredients
- 1.62lbs Water Spinach
- 4 Spicy Green Peppers
- 2 Red Chili
- 1tsp Garlic (Minced)
- 0.4lbs Lean Pork
- 1 tsp Light Soy Sauce
- 1/4 tsp Tapioca Starch
- Pinch of Pepper
- Sesame Oil
- 2 tsp Water
Seasoning
- 3/4 tsp Salt
- Pinch of Pepper
- Sesame Oil
Method 1. Wash and mince pork, mix with marinade.
2. Wash water spinich. Discard leaves serve only stems and dice. Deseed chili and dice, set aside.
3. Heat wok, add 2 tbsp oil and stir-fry minced pork till almost done. Dish up.
4. Add 1tbsp oil in wok, fragrant minced garlic and chili. Add minced water spinich stem, minced pork and seasoning sauce. Stir-fry well and dish up.
NOTE:
Water spinich is alkali in nature. It reduces the acidity in the intestines so as to maintain floral stability and is probably useful in prevention of cancer.
